sunday was a day full of leisurely activities. it was a stunning 85 degrees outside and the summer skirts and flip flops came out for the first time in 2011. my neighbor and i decided that we needed some snacks for this wonderful porch weather. we took my standard hummus recipe and made a few variations.
5 minute hummus (adapted real simple)
ingredients:
1 15 oz. can of chickpeas rinsed
1 clove of garlic
1/4 cup of olive oil
2 T lemon juice
2 T tahini
1 t cumin
salt
paprika
instructions:
1. in a food processor combine chickpeas, garlic, olive oil, tahini, lemon juice, cumin and salt to taste. if hummus is too thick add a tablespoon of water at a time until reaching the desired consistency.
2. transfer to bowl and drizzle with olive oil. finish with a sprinkle of paprika.
** i used this recipe as a base and added in sun dried tomato spread to one batch and roasted red peppers and cayenne pepper to another batch. the possibilities are endless! next time i am thinking kalamata olives or wasabi powder.
